Mediterranean Style Quinoa and Chicken Breast Salad

Salad is big news in my house. There is a big plate of one kind or another on my table almost every day, sometimes twice. I'm always pondering some new twist, a new combo and more importantly a way to integrate a healthy, high-energy punch. A new staple in my refrigerator? Maple Leaf Protonis. Protinis are a great source of protein and packed with flavour. They can be used as a healthy on-the-go snack or they can be incorporated into an everyday meal. They are a 'ready to go protein pack' that can elevate your salads into an energy-filled power meal.  

Here is a quick and easy salad I whipped up with my Protonis Chicken and Cranberry pack. It makes a perfect lunch or dinner, ready to be enjoyed on the go or served as a fantastic side dish for a weeknight dinner. Try it with my Homemade Sundried Tomato dressing, it takes this salad right over the top! 

Your family will be asking for seconds for sure.

Ingredients:

Salad:

2 packs Protonis Oven Roasted Chicken and Cranberry
2 cups quinoa, cooked according to package directions
1 dozen black sundried olives, pitted
1 orange pepper, sliced
3 tbsps feta cheese, crumbled

Dressing:

3 sundried tomatoes
2 tsps capers
olive oil
balsamic vinegar
1 clove garlic
1 tbsp Dijon mustard
salt and pepper to taste

       

  Prepare quinoa according to directions and let cool.

   Chop Protini chicken, olives, sundried tomatoes, capers, peppers, feta cheese and combine with quinoa and Protini cranberries.

   Make dressing. Combine olive oil, sundried tomato, balsamic vinegar, garlic, mustard, salt, and pepper and blend until combined.

   Toss and serve immediately.
