I love barbeque. I love that my husband is a master barbeque-er even more and I take it on as a personal challenge to find the yummiest and the easiest sides to accompany his grilled creations.
These baked cheesy tomatoes are one of my favourites and my husband likes them because they are baked inside and do not take up precious room on his grill.
It's no secret that I have absolutely no idea how to BBQ. Every summer I make some minor comment about being interested in learning but it never actually happens. Thankfully, the men in my life know their way around a grill and are more than happy for me to show up with bags full of groceries and a hankering for things like Bacon-Wrapped Planked Whisky Chicken.
Father's Day is a time to celebrate the important men in our lives but if your family is anything like mine it's these special men that are masters of the grill.
I will admit, I am not always a big fan of leftovers. Unless they are well received in my children's lunchboxes the next day or I figure out a way to re-purpose them, leftovers sometimes languish in the back of my fridge (unless it's something chocolate and then it doesn't stand a chance).
There's this pin making the rounds on Pinterest with the most amazing picture of Lemon Meringue S'Mores. They look so good I've been dreaming about them. Unfortunately, when you click on the pin the link takes you to some random website with no recipe.
I love to cook with canned peaches at this time of year. Winter is breaking and the fresh spring air begs for recipes full of fruit and promises of warm weather. Unfortunately, we're still a few months away from fresh fruit being readily available at the grocery store. That's why canned California cling peaches are my go to for recipes like this Basil and Peach Bocconcini Salad* at any time of year.
When I was little one of my favourite dinner nights was spaghetti night. Just before dinner my brother and I would be told to go and get our spaghetti shirts and we would head over to a special drawer in our father's dresser where the spaghetti shirts were kept. I know now they were old t-shirts my father probably couldn't wear out in public anymore but for us it was a symbol that we were going to eat one of our favourite meals.
Lasagna is a staple recipe in any kitchen. Whether you're looking for a crowd pleasing family-friendly meal everyone will enjoy, an addition to your freezer meal repertoire or something to take to a friend when they need it the most, lasagna is almost always the answer.
I have to admit, since becoming the Canned Soup Mom just over a year ago I have put many mommy-win meals in front of my children and a few complete mommy-fails (which you'll be happy to know I never ever post!).
This Turkey Sloppy Joes recipe, which came straight off of the Cook With Campbell's website (I am the Canned Soup Mom after all!), was a total mommy-win the secon
Scalloped potatoes are among my favourite kind of potatoes and are the best starchy side dish to ham. While I admit this side dish takes a bit more effort than your typical Canned Soup Mom recipe, I promise this is a simplified version and because these potatoes always taste better the next day you can make them the night before.
While I am all for deli-style chicken salad sandwiches on thick slices of white bread, sometimes the part of my brain that reminds me I need to be eating a little bit healthier pipes up and insists that some of my favourite dishes can be made with health in mind. It turns out, this recipe for Greek Yogurt Chicken Salad is as yummy as the original and while I'm going to show you how I make Chicken Salad Lettuce Wraps I also have to tell you that I'll eat this stuff out of a bowl on it's own, over rice or spread on toast. It's that yummy!
My kids and I love salmon but my husband wouldn't eat it if his life depended on it. In fact the only way he'll eat fish at all is if it's white and has been deep-fried until it's mostly batter and oil and comes with a side of fries.
My husband loves wings but unlike some people around here (namely Gav Martell), I’ve never been able to perfect making crispy saucy wings at home. In my mind, this Buffalo Chicken Soup is the next best thing and because it comes together so quickly it’s a perfect weeknight dinner.
This is one of those recipes I came across on Pinterest that involved more than twenty ingredients and just as many steps not to mention at least as many dirty dishes. Like any other recipe that involves that much work I usually just move on, but the combination of chocolate chip cookie dough, Oreos, and fudge brownies was just too tempting to ignore. So of course I came up with a much easier Canned Soup Mom approved version using store bought mixes.
When we first started including the kids in our take-out Chinese food order we always started with Chicken Fried Rice. While we have since expanded their palate to include many more items, Chicken Fried Rice still remains a family favourite.
You know when you've been married long enough to someone that you know exactly what he's going to order at a restaurant with a quick scan of the menu? Well my husband and I have been married for ten years and I can pretty much guarantee you that I can choose each one of his restaurant meals with perfection within a 30-second glance of any restaurant menu.
I love these Chicken Taquitos because they use pre-cooked chicken (like the rotisserie ones at the grocery store), are freezable and are easily eaten with one hand. Whether you're a busy mom on the go inhaling your dinner on the way to ballet class (like me) or trying to feed a toddler a multiple of food groups in every bite (also like me) or my sweet little boy who will only eat things that do not involve a fork and knife this recipe is for you!
Putting a focus on eating healthy is made slightly more challenging with three kids who all have their own very vocal taste buds and a fairly picky-eater husband. It doesn't matter how many hours I've spent meal planning, shopping, preparing and frankly begging people to eat the healthy meals I've prepared, sometimes they just want to see their comfort food favourites grace the dinner table.
