Meatloaf is one of those home cooked comfort foods that often come from recipes passed down for generations. My favourite (and easiest!) meatloaf recipe is pretty basic so when we decided to invite another family over for dinner and meatloaf was the agreed-upon main course, I wanted to come up with something that was still basic enough the kids would eat it but interesting enough to put on the dinner table for guests.
The days are getting shorter and colder and that means it’s time for lazy evenings by the fire and steaming bowls of stick-to-your bones soup. The only problem - besides dealing with kids’ snowsuits and missing mittens - is just because the snow is here and all I feel like doing is hibernating, it doesn’t mean our evenings are getting any less busy. But on the rare occasion where we actually have an evening at home, this soup is fast, easy, and the perfect cold-weather meal.
Every once in a while (okay a lot of whiles), I get a craving for cheese—especially in the cooler Canadian months. While I love baked cheesy pastas, cheesy appetizers, fondues, and pretty much anything else with cheese, sometimes cheese happens on a whim, like when you're steaming vegetables on a weeknight and only have 5 minutes to whip up this basic, but super yummy, cheese sauce.
Like so many moms, I am always trying to find new dinner options that are fast, easy, and worth the effort.
When I found myself staring at a bag of frozen perogies in my freezer and a bunch of our favourite cheese in the fridge, I knew I would hit the jackpot if I could make cheese perogies even cheesier! And boy was I right!
I love barbeque. I love that my husband is a master barbeque-er even more and I take it on as a personal challenge to find the yummiest and the easiest sides to accompany his grilled creations.
These baked cheesy tomatoes are one of my favourites and my husband likes them because they are baked inside and do not take up precious room on his grill.
Putting a focus on eating healthy is made slightly more challenging with three kids who all have their own very vocal taste buds and a fairly picky-eater husband. It doesn't matter how many hours I've spent meal planning, shopping, preparing and frankly begging people to eat the healthy meals I've prepared, sometimes they just want to see their comfort food favourites grace the dinner table.
I have a confession to make — between the over 5,000km of driving we did through Yukon and Alaska and attending BlissdomCanada I haven't cooked (even the Canned Soup Mom version of cooking) in at least 20 days.
