"You Won't Even Miss The Potatoes" Cauliflower Salad

Cauliflower Potato Salad

I love potato salad. It makes me think of summer and backyard barbeques and my grandmother who always made the best traditional potato salad. While there will always be a place at my picnic table for old-fashioned potato salad, this cauliflower salad gives all the taste and texture of potato salad without having to spend the time pealing, slicing and boiling potatoes.

It’s also the hit of the party for those of us looking for something a little healthier to put beside our favourite barbequed entrée.

Simply steam your cauliflower.

Drain and cool.

Mix up your dressing.

Toss your veggies and dressing in a bowl.

Mix until combined.

Serve.

Ingredients:

1 large head of cauliflower, cut into pieces with stem discarded
1 cup mayonnaise (I use low or non-fat)
2 Tbsp. Dijon mustard
Salt and Pepper to taste
1 cup frozen peas, defrosted
2 sticks of celery, sliced thinly
2 green onions, sliced (the white and green parts)

Optional:

2 hard-boiled eggs, peeled and sliced
3 radishes, sliced
5 strips of bacon, cooked and crumbled

Directions:

  Steam your cauliflower until tender but not overdone (approx. 6-7 minutes).

  Drain cauliflower and rinse under cold water to cool. Set aside.

  In small bowl mix mayonnaise, mustard, salt and pepper.

  In large bowl add cauliflower, peas, celery and onions (as well as bacon and radishes if using).

  Top with dressing and mix until combined.

  Refrigerate until ready to serve.

  Top with hard-boiled eggs if desired just before serving.

 

TIP: This salad tastes even better after sitting for a few hours so if you have the time, whip it up in the morning for an evening barbeque or even the night before.

VARIATION: Replace the mayonnaise with ½ cup plain Greek yogurt and ½ cup of non-fat sour cream.

Fast And Easy Fiesta Mac And Cheese Recipe

My whole family loves Mexican food. Whether it’s tacos, nachos, burritos, Mexican has always been a fave. Now, thanks to these fun, new Kraft Dinner Macaroni and Cheese options we can add my Fiesta Mac and Cheese recipe to the list!

As a side note — my kids are THRILLED that Kraft Dinner in shapes are finally available in their corner of the world (and yours too!). I will never forget when we were in a tiny grocery store in Alaska where the highlight of the shopping trip was standing in front of the Kraft Dinner display marvelling at the many different options of Kraft Dinner including the Halloween-shaped one (it was October of course). My son, who was five at the time, stated quite loudly that “if they can have pumpkin-shaped Kraft Dinner in the middle of NOWHERE, then why couldn’t we have it in Canada?”

Yes, there was a lot of emphasis on the “nowhere” or at least enough to embarrass his mother.

Needless to say, my kids are excited about the new shape options and the “Fishy” shapes one is their favourite. Even the shape of the new Kraft Dinner Spicy Cheddar Macaroni & Cheese is a bit thicker and more adult-looking (not that I’d judge if you like your KD the regular way!) than the original shape. In fact, my husband didn’t even know he was eating Kraft Dinner until I told him.

What I love the most about this recipe is that both the adults and the kids in my house feel like they are getting something made just for them. My husband gets to have his dinner with the amount of spice he likes (not the non-existent spice level the kids like) and the kids get to spend their dinner “fishing” for all the different types of fish in the new Kraft Dinner Underwater Creatures Macaroni & Cheese.

I also love that it comes together fast and easy with a few staple ingredients and all with enough time left over to do the regular rushing to sports and activities.

To make my Fast And Easy Fiesta Mac And Cheese Recipe, simply cook your Kraft Dinner.

Sauté onions and ground beef.

Add in the veggies. 

Prepare your Kraft Dinner (the same way you always have!).

Stir in the cooked Kraft Dinner, salsa, and cheese.

Enjoy!

Ingredients:

1 156g box of Kraft Dinner Spicy Cheddar Macaroni & Cheese
1 156g box of Kraft Dinner Underwater Creatures Macaroni & Cheese
1 tbsp. olive oil
1/4 cup onion, diced
1 lb extra lean ground beef
1 cup black beans, drained and rinsed
1 cup frozen corn
1 cup of salsa
1 cup of cheddar cheese, grated

  Cook one package of Kraft Dinner Spicy Cheddar Macaroni & Cheese and one package of Kraft Dinner Underwater Creatures Macaroni & Cheese (in separate pots, of course) according to package directions.

  Meanwhile, heat oil over medium heat, add onions and sauté until soft.

  Add ground beef and cook completely.

  When ground beef is cooked reduce heat and add black beans and frozen corn (yes totally frozen — I promise it will thaw quickly!).

  Prepare both pots of Kraft Dinner according to package directions.

  Add half the ground beef mixture to each pot of Kraft Dinner and stir until combined.

  Add 1/2 cup of salsa (depends on how much you like it) and 1/2 cup of cheese to each pot and stir until combined.

  Serve with additional salsa and cheese on top!

  Mom Tip: If you don’t think your kids will eat black beans (I didn’t think mine would either) then simply omit them in the steps above until you add half the ground beef mixture to the Kraft Dinner Underwater Creatures Macaroni & Cheese then add the black beans to the remaining ground beef mixture (you might want to reduce the amount) and sauté for a minute then add to the Kraft Dinner Spicy Cheddar Macaroni & Cheese — now everyone is happy!

PS: Want a bit more spice? Use mild salsa for the kids and medium or hot salsa for the adults. If you still need a bit more kick, add a few dashes of hot sauce and use Kraft Creamy Mexicana Shredded Cheese with a Touch of Philadelphia.

5 Delicious Ways To Enjoy Apple Chips

It all started with an interview with the stars of one my eldest daughter’s favourite dance shows. I was offered the interview, and I asked if my ten-year-old competitive dancing daughter could co-interview the dancers with me. When they said yes I challenged her to come up with some of her own questions to ask.

I shouldn’t have been surprised when the daughter of a food blogger asked “What’s your favourite snack to keep in your dance bag for between dance classes?” The dancers agreed that “apple chips” were amongst their favourite between-classes snacks, which meant at our next trip to the grocery store my daughter was on the hunt for what else...apple chips.

To be honest, I had never tried apple chips so I wasn’t really sure what to look for, where to look for them, or what they were going to taste like. But then I found Martin’s Crispy Apple Chips in the fresh fruit section (ironically at the end of the apple section) and brought them home.

We immediately threw a few into a container and into my daughter’s dance bag (as per usual we were rushing to dance). Then we popped a few into our mouths and through bites and chewing my daughter says “Mom! They’re crunchy like real chips!” Clearly… we didn’t know what to expect but we certainly were not disappointed.

Martin’s Crispy Apple Chips have now become a staple snack—not just for my little dancer, but for the whole family. Because of this, we’ve come up with some fun, easy, and yummy ways to eat apple chips that are just too good not to share!

1. In a bowl

I know it sounds simple, but apple chips have become one of our favourite crunchy snacks. Toss them in a bowl for your next family movie night.

2. In a container to enjoy while on the go

Enjoy them by putting them in containers for before and after activities, as sports snacks, or as a welcome addition to your kids’ lunchboxes.

3. As a dessert

YES...my children will absolutely eat apple chips as dessert. Especially if served and/or drizzled with store-bought caramel sauce or with my Chocolate Peanut Butter Cheesecake Dip (recipe below) or even just on top of a bowl of vanilla ice cream.

4. As a sandwich topping

Stay with me on this one...I actually got this idea from the Martin’s Crispy Apple Chips website because there are some recipes like my Slow Cooker Pulled Pork, my Beef Dip or my Easiest Sloppy Joe recipes that are super yummy with a bit of sweet crunch on top.

5. With Dip

What mom isn’t always on the lookout for a quick, easy, healthy snack that their kids will actually eat? My kids love to dip crackers and veggies into dip and lately I’ve been replacing their crackers with apple chips with not a single complaint at all! Pair your apple chips with store-bought hummus or a homemade, high-protein dip like my Yogurty Peanut Butter Dip or Maple Greek Yogurt Dip (recipes below) and you have yourself the perfect snack covering some of the most important food groups!

  Yogurty Peanut Butter Dip

Ingredients:

1 individual container of plain yogurt
1/2 cup of smooth peanut butter

Directions: Stir together all ingredients until completely combined and enjoy!

 

  Maple Greek Yogurt Dip

Ingredients:

1 individual container of plain Greek yogurt
2 tbsp. maple syrup
1/2 tsp vanilla
pinch cinnamon

Directions: Stir together all ingredients until completely combined and enjoy!

 

  Chocolate Peanut Butter Cheesecake Dip

Ingredients:

1/2 cup smooth peanut butter
1/2 cup chocolate-flavoured cream cheese
2-3 crushed up graham crackers (if desired)

Directions: Stir together peanut butter and cream cheese until completely combined. Top with crushed up graham crackers (and a few chocolate chips too if you have them lying around) and enjoy!
