Overnight Baked Egg Nog French Toast

If you’re like me and love finding easy make-ahead recipes you can prepare and serve in the middle of all the Christmas morning mayhem, this Overnight Baked Egg Nog French Toast is definitely for you!

I have spent many Christmases at my grandparents’ house in Northern Ontario and while most of my relatives look forward to Christmas dinner I am always the most excited about my Grandmother’s Christmas morning brunch.

Did You Know You Can BAKE Pancakes?

After all the presents are opened and the kids are happily playing with their new toys, my Grandma will pull her famous Christmas Morning Strata out of the oven and put it out with fruit salad, pink grapefruits, muffins and even a plate of Christmas cookies (which I always think is pretty special because when else do you get to eat cookies for breakfast?).

Needless to say, when we're not able to spend Christmas at my Grandparents', I still keep the Christmas Morning Brunch tradition in my own home and while my Grandma’s Christmas Morning Strata will always be the main dish, this Overnight Baked Egg Nog French Toast is awesome for guests who need a little something sweet on the side.

Simply dry out your bread.

Mix up some sugar with butter.

Spread on the bottom of your pan.

Mix your remaining ingredients.

Dip your bread.

Place in pan.

Bake.

Enjoy!

Ingredients:

¼ cup butter, melted
¾ cup brown sugar (I use the light kind)
10 slices of thick cut French Bread, left out a few hours on the counter or toasted slightly
8 eggs
1 cup egg nog
1 Tbsp. vanilla
1 tsp. cinnamon
¼ tsp. salt

Directions:

 In a small bowl, stir together melted butter and brown sugar until combined. Spread on the bottom of 9x13 baking dish sprayed with non-stick cooking spray (or buttered).

 In another bowl, gently whisk eggs, then add egg nog, vanilla, cinnamon and salt and whisk gently until combined.

 Dip each slice of bread into egg mixture (on both sides) and arrange in baking dish, overlapping as necessary.

 Pour remaining egg mixture evenly over bread slices.

 Cover with plastic wrap and leave in refrigerator overnight (or a minimum of 4-5 hours).

 When ready to prepare, remove plastic wrap and bake uncovered in a pre-heated 350F oven for 30-35 minutes. If your oven bakes hot, just check your French Toast at the 20 minute mark to see if it’s browning too quickly and if yes, cover loosely with a piece of foil for remaining baking time. NOTE: Remember to let your baking dish sit on the counter and come to room temperature while the oven is heating.

 Serve with sprinkled powdered sugar on top and maple syrup.
