Get Bowled Over By The Best Burrito Bowls Recipe

A Bowl Full of Rice, Corn, Beans, Chicken & Guacamole...It Doesn't Get Any Better!

I love a dinner that includes the protein, vegetables and grains in one which is why I love stir fries. If it were up to me I’d make a stir fry every night but in my ongoing effort to have my kids actually enjoy what they are eating I am always on the lookout for new and exciting recipes. This burrito bowl recipe includes rice, beans, corn and chicken.  If you like guacamole add it on top of your burrito bowl and if you don’t, save it for your nacho chips.

Ingredients:

4 chicken breasts, cut up in small pieces
1 Tbsp cumin
1 Tbsp chili powder
1 tsp ground coriander
½ tsp salt
3 tsp vegetable oil, divided
1 cup black beans, rinsed
1 cup corn kernels
2 cups cooked brown rice
1 cup prepared guacamole
 

  In a small bowl mix together cumin, chili powder, ground coriander, and salt.

  Toss spice mixture with chicken pieces.

  In a medium size pan over medium heat add 2 tsp oil. Cook chicken until cooked through. 

  Place cooked chicken into a bowl and clean out pan.

  Heat remaining 1 tsp oil in clean pan over medium heat. Add corn and beans and cook until corn and beans are heated through. 

  In each bowl place a heaping cup of cooked brown rice, top with corn and bean mixture, then some chicken pieces and top with a tablespoon of guacamole.

Makes 4-6 servings
