Baby-Friendly Zucchini Muffins

No sugar, butter, or oil recipe

Are you stumped as to what to serve your baby for snacks. Especially stroller-friendly snacks you can pack to go! Jazz up the menu with these super simple, super healthy and super yummy muffins.  With no sugar, no butter and no oil they are perfect for baby (and mom too)!

Zucchini Muffins

(Use a mini-muffin tin to make them the perfect size for little hands)

2 1/2 cups shredded zucchini
1 cup orange juice (more or less as needed)
2 cups whole-wheat flour
1/2 cup plain yogurt
3 whole eggs
1 tablespoon vanilla extract
3/4 cup unsweetened applesauce
1/2 cup wheat germ (optional)
1 Tbsp low sodium baking powder
1 Tbsp baking soda
1 Tbsp ground cinnamon

Prep: Preheat oven to 350 F. Grease/spray mini muffin tin.

1. Combine the flour, wheat germ, baking powder, baking soda, and cinnamon in a large mixing bowl.
2. Add orange juice, yogurt, eggs, and vanilla; beat just until well mixed.
3. Fold in the zucchini and applesauce. Pour the batter into the prepared cake pans.
4. Bake until a knife inserted in the center comes out clean, 35 to 40 mins. Cool briefly in the pans, then turn out onto wire racks to cool completely.

This recipe for Baby Friendly Zucchini Muffins was recently served at my son’s first birthday party and were a hit with babies and nutrition conscious mamas.
