Post-Workout Super Smoothie

It's easy, filling, and delicious!

Am I the only one who indulges a bit too willingly during the holidays? It's possible, but unlikely. To combat days when I've been popping the chocolates with reckless abandon, living in an imaginary world where there are no consequences — like shrinking pants — I often have smoothies for lunch.

It's not my favourite meal of the day since it's wedged between work and shuttling kids back and forth to school, so anything I can eat or drink with minimal fuss is great. Smoothies need to be satisfying, though because a) I often drink them following a workout and b) they're replacing solid food. I love food.

Today I met a few friends at a local park for a stairs-run-strength training workout that left me so hungry I almost fought my daughter for the last chocolate Easter bunny when I got home. Instead I made this smoothie. It comes out a sort of greenish-purplish colour, but don't let that throw you off, it's delicious!

Ingredients

1 cup frozen blueberries
1 large handful fresh spinach
1 banana
2 cups unsweetened coconut milk beverage (I used So Delicious.)
1 cup plain unsweetened yogurt
1 heaping tablespoon raw honey
1 scoop Greens+ powder

Throw the ingredients into a heavy duty blender and mix completely.

Makes 4 cups.

Bon appétit!
