Unbelievably Easy Banana Ice Cream

Want to know a secret? It is possible to make ice cream with only one ingredient. This goes against everything we think about ice cream. We traditionally think ice cream is made with milk, heavy cream, vanilla, sugar and sometimes eggs. Well, the truth is that it is possible to make creamy, scoopable ice cream with a single ingredient...frozen bananas.

This recipe requires ripe bananas. If your bananas are not ripe, place them inside a paper bag with a ripe tomato or apple. The ripening fruit will generate ethelyne gas which accelerates ripening. Depending on how unripe your bananas are this process can take 24-48 hours. Kids of all ages will love making this ice cream. Let the kids slice the bananas and help cream them in the food processor. The transformation of the bananas is like a delicious science experiment. Don't be afraid to take banana ice cream to the next level by adding a handful of frozen strawberries, a scoop of peanut butter or a few chocolate chips. Serve this super simple lactose free, sugar free, gluten free, vegetarian and vegan ice cream all summer long.

Ingredients

3 ripe bananas (That's it!)

Directions

 Slice ripe bananas and arrange, in a single layer, on a parchment paper lined baking sheet.

 Place baking sheet inside the freezer, until completely frozen...approximately 2-3 hours.

 Remove frozen banana from freezer and place inside food processor.

 Blend bananas until they are smooth and creamy...approximately 5 minutes. The frozen bananas will go through a few stages. At first the bananas will appear crumbly, then thick and lumpy. Keep blending until the bananas are smooth and fluffy.

 Once the bananas are smooth scoop into a freezer safe container or serve immediately. For best results place the banana ice cream in the freezer for 1 hour, to make it scoopable.
