Killer Pancakes

Seven years ago my daughter was diagnosed with severe nut allergies. Since then, I've been trying to find a replacement for my beloved peanut butter for breakfast. I've tried this french toast recipe which my kids have every morning, and this healthy chocolate breakfast spread.

My good friend Amber Mac, who is such a healthy eater, suggested I start my mornings with cottage cheese, but it fell flat for me.

But now I have this new recipe to add to my breakfast arsenal from my cousin Dana and her husband David. I made it this morning and it really hit the spot.

When they sent the recipe they didn't name it, so I'm calling them...

Killer Pancakes

1/3 cup quick oats
2 tablespoons cottage cheese
8 tablespoons of egg whites (buy them in the carton)

• Blend all together with mixer or magic bullet
• Spray pan and cook like a pancake.
• Great with fresh fruit on top.

Makes one large pancake or two smaller ones. I slathered mine with apple butter this morning.

They're really filling and keep you going for hours. If you make them or come up with a yummy variation, let me know!!
