“Doritos” Flavoured Roasted Chickpeas

Doritos Flavoured Roasted Chickpeas

Have I ever mentioned how much I love roasted chickpeas? Of course I have! I have mentioned my grand love for chickpeas in general and roasted chickpeas in particular so often that you're probably thinking I must be getting massive kickbacks from the Saskatchewan Pulse Growers. 

I'm not. But I would be open to the idea! My door is always open, Saskatchewan Pulse Growers. Call me?

Chickpeas are just so great: they are full of iron, fibre, and magnesium, they are very versatile (check out these Chickpea Cookie Dough Bites for proof), and they are also an economical source of protein. At YMC we've known for a long time that roasted chickpeas make a deliciously healthy salty snack, and now the rest of the world has caught on. I am seeing them in the supermarket, in various chip-like flavours, selling for ten times what it would cost to make them at home.

You know what I'm going to say: skip the pre-packaged roasted chickpeas and make these delicious Doritos-flavoured ones at home.

I really love Doritos; I could scarf down a whole family-sized bag by myself, although actually doing that only leads to massive regret and bloating. And orange fingers. Instead, I like to make these; scarfing down the whole batch makes me feel virtuous and strong. Maybe it's all that iron. Je ne regrette rien. 

 

Ingredients

1-19 ounce can chickpeas, rinsed and drained
1 tablespoon olive oil
 
“Doritos” Seasoning
 
3 tablespoons nutritional yeast
1/2 teaspoon garlic powder
1/2 teaspoon onion flakes
1/8 teaspoon dry mustard
1/4 teaspoon dried parsley
1/4 teaspoon sea salt
1/4 teaspoon cracked black pepper 
 
Directions
 
  • Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  • Toss chickpeas in olive oil and spread evenly over prepared baking sheet. Roast in oven for 25-30 minutes, stirring halfway through to ensure even roasting.
  • Meanwhile, in a medium bowl mix together the "Doritos" seasoning ingredients. 
  • When the chickpeas are finished roasting, immediately transfer them to the bowl with the seasoning, and toss to combine.
